Russian Egg Salad

• 120ml/4fl.oz. Mayonnaise
• 90ml/3fl.oz. Plain Yoghurt
• 1 teasp Hot ready made Mustard
• Salt
• 1 Garlic Clove, crushed
• 6 Hard Boiled Eggs, chopped
• 2 tbsp finely chopped Spring Onion (green parts only)
• 1 tbsp finely chopped Pimento to Garnish

1. Place the mayonnaise, yoghurt, mustard, salt and garlic in a small mixing bowl and mix well.

2. Place the egg and spring onion in a serving bowl then add the mayonnaise mixture and mix well.

Garnish with the pimiento just before serving.
