Ingredients:
- 175g/6oz Cooked Peas
- 175g/6oz Cooked Potatoes
- 175g/6oz Cooked French Beans
- 75g/3oz Cooked Turnips
- 175g/6oz Cooked Carrots
- 3 tbsp Olive Oil
- 1 Tbsp Wine Vinegar
- Salt and Pepper
- Lettuce leaves to serve
- Mayonnaise to serve (check ingredients)
Preparation:
1. Cut all the vegetables into small dice and place in a large bowl. Pour over the oil, vinegar, salt and pepper and mix thoroughly.
2. Leave in a cold place for at least 2 hours, turning occasionally.
3. To serve - Give a final stir, pile onto a platter lined with lettuce leaves and top with a coating of mayonnaise.
